    These Chocolate Chip Pumpkin Cookie Bars are super easy to make, and they have a lightness like cake, but also a density of cookies.

    Add in pumpkin puree, chocolate chips, and pumpkin spice, and you have one heck of a treat!

    These cookie bars always go down so well at our house. They're also perfect to give as an edible gift, bring to a bake sale, or give to neighbors!

    To make them, just mix up the dough, fold in the chocolate chips, spread into a pan, and bake. Easy! Easier than cookies, since you don't have to scoop them out individually

    Mixing sugar and butter.

    Add the butter and sugar to a large mixing bowl and cream with an electric mixer for 3 minutes or until light and fluffy.

    Sifting in the dry ingredients.

    Beat in the egg, pumpkin puree and vanilla and beat again (the mixture may separate slightly, but don’t worry, it will come together with the flour).

    Sift the flour, spices, baking soda and salt into the pumpkin mixture and gently mix to combine completely (do not beat).

    Stir in the chocolate chips gently.

    Spreading the batter into the pan.

    Pour the batter into a lined pan and spread it out.

    • ¾ cup granulated sugar
    • 1 large egg
    • 1 cup pumpkin puree

    • 1 tablespoon pumpkin pie spice
    • 1 teaspoon baking soda
    • ½ teaspoon salt
